Gajar ka Halwa Recipe | Carrot Halwa | Carrot Pudding | Shenaz's Platter

Gajar ka Halwa, A classic traditional Indian sweet dish made mostly during festivals. 

I always think of it whenever I want to make some sweet at my home to satisfy my sweet tooth. It is easy , takes less time to cook and tastes delicious at a family gathering.

We can make it in our own different ways which can be eaten by the aunt who wants it dripping in Ghee and saying 'Halwa ho tho aisa ho' and health conscious sister who would never share it with anyone and grand pa who is restricted to eat sweet but still can enjoy it with a whole heart. 

I am going to show you the classic process of making it. You can add different ingredients of your choice such as milk maid instead of just milk, khoya to make it more luscious and mouth watering.



Ingredients:

  • Carrots - 1 kg
  • Milk - 300 ml
  • Sugar - 350 gm
  • Ghee/Butter - 200 ml
  • Cashews - 50 gm
  • Almonds - 50 gm
  • Raisins - 50 gm
  • Pistachios - 50 gm

Cooking Process:
  • Soak Cashews and Almonds for an hour and grate the carrots.
  • Take a bowl and add ghee in to it.
  • Fry the soaked nuts and raisins and put it aside.
  • In the remaining ghee add grated carrots and shallow fry them for some time.
  • After few minutes add milk and sugar to the carrots.
  • Cook it till the carrots are cooked and milk is reduced.
  • Serve hot by sprinkling fried nuts and raisins.
