Gajar ka Halwa, A classic traditional Indian sweet dish made mostly during festivals.
I always think of it whenever I want to make some sweet at my home to satisfy my sweet tooth. It is easy , takes less time to cook and tastes delicious at a family gathering.
We can make it in our own different ways which can be eaten by the aunt who wants it dripping in Ghee and saying 'Halwa ho tho aisa ho' and health conscious sister who would never share it with anyone and grand pa who is restricted to eat sweet but still can enjoy it with a whole heart.
I am going to show you the classic process of making it. You can add different ingredients of your choice such as milk maid instead of just milk, khoya to make it more luscious and mouth watering.
Ingredients:
Carrots - 1 kg
Milk - 300 ml
Sugar - 350 gm
Ghee/Butter - 200 ml
Cashews - 50 gm
Almonds - 50 gm
Raisins - 50 gm
Pistachios - 50 gm
Cooking Process:
Soak Cashews and Almonds for an hour and grate the carrots.
Take a bowl and add ghee in to it.
Fry the soaked nuts and raisins and put it aside.
In the remaining ghee add grated carrots and shallow fry them for some time.
After few minutes add milk and sugar to the carrots.
Cook it till the carrots are cooked and milk is reduced.
Though cooking biryani involves a lot of preparation and time, I say its worth of taste and delight to our taste buds. The process of making contains 3 steps:
Marination Ingredients Required:
Chicken - 1kg
Garlic Paste - 1 tbl spn
Ginger Paste - 1 tbl spn
Chilli Powder - 2 1/2 tbl spn
Salt - 3 tbl spn
Yogurt - 500g
Lemon - 1
Garam Masala(Grind 4Cinnamon Sticks ,5Green Cardamom,Cloves, Few Black Pepper Corns, 1 tblspn of Caraway Seeds, 1/2 tblspn of Coriander Seeds and 1/2 tblspn of Cumin Seeds)
Process:
Mix all the ingredients in a bowl and set aside for at least 2 hours to get soft and juicy chicken.
Preparation of Rice
Ingredients Required
Rice - 1kg
Salt - 2 tble spn
Star Anise - 2
Cinnamon Sticks - 2
Green Cardamom Pods - 4
Cloves - 5
Mace - 3(Optional)
Black Pepper Corns
Caraway Seeds - 1 tbl spn
Oil - 5 tbl spn
Water
Process:
Wash the Rice in a bowl.
Measure equal quantities of rice and water.
Add the remaining ingredients to rice.
Cook rice till its 70% cooked.
Assembling Everything Together Ingredients Required
Marinated Chicken
2/3rd Cooked Rice
Fried Onions - 3 medium sized
Green Chilies - 7
Coriander leaves
Mint leaves
Lemon juice
Flour dough(Optional)
Process:
Take a large bowl.
Add marinated chicken layer to the bowl.
Sprinkle a layer of fried onions, green chilies, coriander leaves and mint leaves on it.
Add rice on top of it.
Sprinkle a second layer of fried onions, coriander leaves and mint leaves.
Pour lemon juice and food color on it.
Close the lid by sticking it with a flour dough, So that the pressure and aroma inside the bowl is maintained.(This step is optional)
Cook it for 20-25 mins on medium-low flame. The delicious biryani is ready to serve.
